What a treat to wake up to a beautiful blue sky this morning….And a beautiful morning deserves a beautiful breakfast for sure!
Rose & Strawberry Mousse
A handful of frozen strawberries (10 approx)
A little liquid of your choice (nut milk etc….I used kefir)
A sprinkling of chia seeds & desiccated coconut
A handful of cacao nibs
A dusting of rose petals
(As you can see, scientific measurements aren’t my strong point!)
1. Blend the strawberries, banana, avocado & a few rose petals with a little liquid
2. Layer the mousse with the coconut & chia seeds
3. Top with the cacao nibs & remaining rose petals
4. Dig in & enjoy!!

“I have been a huge fan of Iswari Superfoods Ireland for some time. I love their ethics & their philosophy and I really love the fact that they’ve brought incredibly clean, not to mention fairly priced, superfoods to our Emerald Isle. It doesn’t stop there though; they literally take seconds to prepare. Just add water or milk of your choice, stir & enjoy. Even the busiest amongst us can manage that!

My personal favourite is Buddha’s Awakening Chocolate Hit. It makes such a decadent, guilt free breakfast, and I can honestly say it easily keeps hunger pangs at bay until lunchtime. Can I let you in on a little secret though? I haven’t confined it to just the breakfast table! I’ve eaten it as a satisfying snack at different times of the day. I’ve added it to everything from smoothies, to avocado mousse, to homemade energy balls. I’ve even used it, along with Iswari Fruits of Love & Seeds of Wisdom, as a topping for coconut yoghurt. What’s more, I’m sure I will be coming up with plenty more ways to add it to my diet!
Two of the biggest concerns my clients have regarding breakfast, are lack of variety, and the amount of time needed to prepare it. I think it’s safe to say that this range confidently addresses both these issues. Now go get yourself some, before it all ends up squirreled away in my cupboard!”

This week I have been mostly experimenting with a clean eating vegan diet.
I’m vegetarian as it is, so although not a huge adjustment, I did face a few difficulties, particularly at breakfast time. But as they say, necessity is the mother of invention & so I came up with this tasty dish. Let me introduce you to my world-famous (ok that’s a slight exaggeration!) Courgette Stacks! They are gluten, dairy & sugar-free, and to be honest would work just as well on the lunch or dinner table. These got quite the reaction on Instagram & Facebook and I promised to share the recipe. So here goes……
Vegan Courgette Stacks
You will need:
- 1 courgette
- 6 cherry tomatoes
- 4 mushrooms
- 1/2 an avocado
- 1/2 spring onion
- 1 small clove of garlic crushed
- Juice of 1/4 of a lemon
- 1/4 tsp chilli flakes
- pinch of Himalayan rock salt & cracked black pepper
- A drizzle of olive oil
- A few torn basil leaves
- Thinly slice the courgette lengthways & also thinly slice the tomatoes & mushrooms
- Put all of these under the grill & turn the courgette slices when they start to brown
- In the meantime prepare the avocado, by mixing all the other ingredients together (except the basil & olive oil)
- Assemble your stacks as follows; slice of courgette, avocado, mushrooms, tomatoes, basil and repeat.
- Put the stacks back under the grill just to heat through
- Finish with a final layer of avocado & a drizzle of olive oil
- Sit down, relax, chew & enjoy!

Overnight oats have been doing the digital rounds for some time now, but I wonder how many of you have actually tried them? They are the ultimate portable “fast food” breakfast-or indeed they make a super satisfying snack at any time of day.
The variations are endless; peanut butter & banana, mango & mint or apple & cinammon. You can find more ideas to tickle your fancy from Monica at The Yummy Life here. Pictured above is my favourite combination-a superfood chocolatey feast that is like manna from heaven! (Well to me at least!)
I buy my Iswari superfoods at a local health food shop, but they (& more deliciousness!) are available online here. Iswari’s website is a wealth of information for anyone who is new to superfoods, & if you want more recipes I suggest you connect with them on facebook too.
- 1/2 cup organic gluten-free oats
- 1/4 cup Natures Path toasted buckwheat cereal (optional)
- 1 tbs cacao nibs
- 1/4 tbs bee pollen
- 1 tsp chia seeds
- 1/2 tsp raw cacao powder
- 2 dates, finely chopped
- 1/2 cup of fruit (I used frozen berries & 2 diced strawberries)
- Almond milk (to cover)
Now for the “tricky” bit! Throw all the ingredients in a mason jar, add enough almond milk to cover, replace the lid & shake! Pop it in the fridge & it’s ready to use in the morning (or after approx 4 hours if you can’t wait that long!)
You might be saying to yourself ” I don’t have all those ingredients”-No problem, just improvise and use what you have. No mason jar? Use any with a screw top lid. I find the dates are enough for me, but if you like things a little sweeter just add your favourite.
